I love making stir fry. Its really easy to make and the colours make you want to eat healthy every single day. Some of my friends know i’d rather make a sauce pan of stir fry than make the regular soup or stew.

The beauty of stir-fry is there is no hard and fast rule to making it and you dont have to use all the ingredients (veggies) in the recipe. As long as you have at least 4 different veggies, you are good to go.

Lets start!

Ingredients needed– (Serves 4)

  • 1/2 head of Cabbage
  • 4 large Carrots
  • Peppers- 1 Red, 1 Green, 1 Yellow, 1 Orange
  • one head of Spring Onions
  • 2 handfuls of French Beans (also known by many other names such as – string beans, runner beans, green beans)
  • 1 large Onion
  • Garlic/ginger (chopped or grated)
  • A handful of Shredded Chicken/beef (optional)
  • 2 tablespoons of Vegetable oil
  • 2 tablespoons of Soy sauce
  • 1 tablespoon Cornstarch (optional)
  • 1 cooking spoon chicken or beef broth (optional)

Preparation

Clean and cut up all the veggies in the desired shape and put them in different plates. You could either dice, or slice them up like matchsticks.

If using shredded chicken or beef (this can be gotten from any major supermarket or you can manually slice up chicken breast or beef at home), marinate it then fry in a shallow pan until the the juice comes out of the meat (chicken/beef) and it starts to turn brown.

(When making stir-fry, you always start with the firmest or hardest veggie and gradually move on to the softest).

Add your cut-up carrot to the pan and stir for a minute. Add the french beans and stir for a minute. Add your onion, stir. Add the cabbage, stir. Add the spring onion, garlic and ginger (if using) and stir. Add the peppers and the corn starch and stir.

Pour in the broth and stir properly, add the soy sauce, stir till it begins to simmer. The broth and corn starch will help thicken the stir-fry and make a sauce which makes it more enjoyable, but its not necessary you add this step to your stir fry. Ensure your check for salt at this point. We don’t want our delicious meal going to waste because of the salt!

Stir fry is best enjoyed when the veggies are crispy and the colours of all veggies used are very vibrant and alive. The longer you leave to cook, the less crispy to taste and the less bright they will appear.

Serve with rice, noodles, yam or enjoy alone.
